Pecan Pie

Courtesy of:  I think this came from some website many, many years ago but I can't remember which one.

 Equipment: 2 Bowls
                     Measuring Cups and Spoons
                     Spatula/spoon, whisk
                     cooling rack
                     knife, cutting board
                     plate

Ingredients:  1 cup Karo White Corn Syrup
                      1 cup Brown Sugar
                      1/3 tsp Salt
                      1/3 cup melted butter
                      1 tsp Vanilla extract
                      3 Eggs
                      2 cups roasted pecans
Pie Shell (I use frozen, traditional shells, but you can make your own)

Step 1: Put one cup of pecans on a plate and microwave for 1 min.  Take them out, toss them around, microwave for 1 more minute.   If they still don't feel done, put them on for another minute.

Step 2: Get a cutting board and knife.  Chop the roasted pecans until they're all in half.  (I buy pecan halves to save myself this step.

Step3: :Put butter in microwave until completely melted.  During this step, preheat your oven to 350.

Step 4: Mixing
In one of your bowls, mix together:  1 cup corn syrup, 1 cup brown sugar, 1/3 tsp salt, 1/3 cup melted butter, 1 tsp vanilla extract.

Step 5: In your other bowl, mix(slightly beat) eggs.

Step 6:Add the eggs to the batter in the other bowl and stir it all up until it looks like it did before you added the eggs.

Step 7: Pour pie filling into pie shells

Step 8: Sprinkle your 2 cups of pecans onto the pies.  Some pecans will sink into the filling while others will float to the top.  Now put your pies in the preheated 350* oven for 1 hr to 1hr 10 mins.

Step 9: After the pie has been in the oven for about 30 mins, take it out and put strips of foil around the edge to keep your pie crust from burning.  Be careful not to spill your pie; the filling is runny and hot!  Put the pie back in the oven.

Step 10: After you put your pies back in the oven, they will need 30 to 40 more minutes of bake time.  After about 30 mins ( a total of 1 hour in the oven) test the pie to see if it's done.  You can test it by sticking a knife in the middle.  If the knife comes out clean the pie is done, if it comes out full of filling, it needs about 10 more mins in the oven.

Once the knife comes out clean, take the pie out and let it cool on your cooling rack.  I top mine with whipped cream and enjoy every bite!
