Guacamole

Courtesy of: This is not unique, it's pretty typical of most Mexican restaurants and it's how I learned to make it.

Ingredients:

3-4 avocados
1/2 tomato, diced
1 jalapeno, finely chopped
1/4 onion, finely chopped
a few sprigs of cilantro
1/2 tsp lime juice (approx)
salt to taste

Cut the avocados in half, remove the pits.  Use a spoon to scoop the avocado into a medium sized bowl.  Mash the avocado using a potato masher or fork.  Add the rest of the ingredients and mix.

*remember to remove the jalapeno's seeds before chopping if you don't want spicy guac.
