Jamie's Curry Chicken

1-2 lbs chicken breasts, cubed
1 onion, chopped
1 green bell pepper, chopped
1 can diced tomatoes (if you make more than 1.5-2 lbs chicken, use 2 cans)
flour
oil
salt
pepper
cayenne
garam marsala spice (optional)
curry powder
steamed rice

 Take the cubed chicken, season with salt, pepper, cayenne, garam marsala, then dredge in flour. Heat oil in a wok, add chicken, fry until brown. Add the chopped onion and bell pepper to the chicken, continue to fry. Add the curry powder (about a heaping tbsp!) to the chicken and veggies and stir. Add the can of diced tomatoes and simmer for about 30 minutes. Serve over a bed of rice.

** I prefer the way it tastes with the garam marsala but can't find it in my local markets anymore
