Hello everyone! I hope you enjoyed your Independence Day celebrations. Eva and I had a very relaxing evening with the family, eating hot dogs and hamburgers then lighting sparklers on the deck. Eva allowed me to sleep in so I woke up feeling super energized that morning. I started by chopping up some watermelon then I used my star shaped cookie cutter to make them extra special for my bean. I rinsed and added some blueberries and put them on a white plate...get it? Fourth of July, red, white, and blue? Aaahhhh now you get it. I was inspired by some really neat photos. I'm always amazed at how creative some people are:
I also whipped up some waffles using one of my favorite waffle recipes, which is the topic of my post. I've tried a few waffle recipes, and they've all tasted pretty good, but I found that this one was the easiest to follow. It comes from food.com:

Ingredients:
Directions:
- 1In a large mixing bowl, whisk together all dry ingredients.
- 2Separate the eggs, adding the yolks to the dry ingredientmixture, and placing the whites in a small mixing bowl.
- 3Beat whites until moderately stiff; set aside.
- 4Add milk and melted butter to dry ingredient mixture and blend.
- 5Fold stiff egg whites into mixture.
- 6Ladle mixture into hot waffle iron and bake.Following this recipe, I am able to make 3 or 4 really big, thick waffles. I am the type of person who prefers to 'just wing it' in the kitchen and I hate following recipes, but this one is SUPER simple.
