Waffle Recipe/4th of July

Hello everyone!  I hope you enjoyed your Independence Day celebrations.  Eva and I had a very relaxing evening with the family, eating hot dogs and hamburgers then lighting sparklers on the deck.  Eva allowed me to sleep in so I woke up feeling super energized that morning.  I started by chopping up some watermelon then I used my star shaped cookie cutter to make them extra special for my bean.  I rinsed and added some blueberries and put them on a white plate...get it? Fourth of July, red, white, and blue?  Aaahhhh now you get it.  I was inspired by some really neat photos.  I'm always amazed at how creative some people are:

I also whipped up some waffles using one of my favorite waffle recipes, which is the topic of my post.  I've tried a few waffle recipes, and they've all tasted pretty good, but I found that this one was the easiest to follow.  It comes from food.com:

serves 6-8

Ingredients:

Directions:

  1. 1
In a large mixing bowl, whisk together all dry ingredients.
  2. 2
Separate the eggs, adding the yolks to the dry ingredient
mixture, and placing the whites in a small mixing bowl.
  3. 3
Beat whites until moderately stiff; set aside.
  4. 4
Add milk and melted butter to dry ingredient mixture and blend.
  5. 5
Fold stiff egg whites into mixture.
  6. 6
Ladle mixture into hot waffle iron and bake.

Following this recipe, I am able to make 3 or 4 really big, thick waffles. I am the type of person who prefers to 'just wing it' in the kitchen and I hate following recipes, but this one is SUPER simple. If you like homemade waffles you should give it a try!

Here's a picture of the waffles and my Evabean, ready to eat, and wishing everyone a Happy Independence Day :)
